El Salvador is well known for its Strictly High Grown (SHG) coffees, a designation given to beans cultivated at higher altitudes, typically around 1,350 metres above sea level or higher. At these elevations, cooler temperatures slow the maturation of the coffee cherries, allowing them to develop more slowly on the tree. This extended growing period results in denser beans with more concentrated sugars and flavour compounds.

As a result, SHG coffees are prized for their clarity, complexity, and well-developed body, often producing cups with deeper sweetness, balanced acidity, and richer flavour profiles. These high-altitude growing conditions are one of the reasons El Salvador is recognised worldwide for producing high-quality specialty coffees.
